Fifteen crafters attended the fortnightly meeting in Lachlan Hall to share their news and diverse examples of knitting, spinning, crochet, dyeing and blending, weaving and soft toy making – oh and a Coffee and Brown Sugar Tray Cake (Donna Hay – recipe below). As usual, the conversation was endless (and riotous at times) yet, because we are women, most of us were able to participate in a conversation without losing track of the many other conversations in the room!
The images below include a “Grandma Pack” of baby items being prepared for a friend, knitting of hats and sweaters, baby dolls to be donated for overseas aid, an example of heirloom weaving, a hand-knitted dress for a much loved grandchild, developing rugs, a triangular shoulder shawl, a wool and alpaca scarf and lots more yarn to come off the bobbins for more of the above.
Coffee and Brown Sugar Tray Cake by Donna Hay
1 cup (175g) dark brown sugar
2 teaspoons ground cinnamon
2 1/2 cups (330g) self raising flour, sifted
1 1/2 cups (330g) caster (superfine) sugar
1 1/2 cups (275ml) milk
250 g unsalted butter, melted
2 teaspoons vanilla extract
1 tablespoon instant coffee granules
60 g unsalted butter, extra, melted
Preheat oven to 160 deg C (325 deg F). Place the brown sugar and cinnamon in a small bowl and mix to combine. Set aside. Place the flour, sugar, eggs, milk, butter and vanilla in a large bowl and whisk until smooth. Poor half the mixture into a lightly greased baking tin (I recommend 25cm x 30cm deep sided) lined with baking paper. Top with the coffee and half the brown sugar mixture. Pour over the remaining cake mixture and spread evenly. Sprinkle with the remaining brown sugar mixture and spoon over the extra melted butter. Cook for 50-55 minutes or until cooked when tested with a skewer. Slice to serve. Serves 8-10.
