With the first useful rain to fall on the Lachlan Valley in five months drumming on the roof, Lachlan Craft Circle gathered today in friendship and various persuits of “craftiness”. One member who was recently reported to have “crossed the great divide” made her presence felt (happily for us) by ensuring all that she is “still on the page”! Never a dull moment at Lachlan – you just had to see the hats walking out the door to know this is the place to be!
Recipe for today: MUM’S WEET-BIX SLICE
Ingredients: 170g butter, 5 Weet-Bix crushed, 1 cup sugar, 1 cup dessicated coconut, 1 egg, 1 cup plain flour, 1 teaspoon baking powder, 1 heaped tablespoon cocoa powder, 1 teaspoon vanilla essence
Method: Preheat oven to 180 deg C. Cream butter, sugar and vanilla together, add egg and beat well. Add coconut, Weet-Bix, sifted dry ingredients and combine well. Line a lamington tray with baking paper. Press mixture into pan and bake in oven for approximately 45 minutes. When cool, ice with chocolate icing, sprinkle with coconut and cut into squares.
